Introducing Paso-Primero Blanco! This crisp, dry white wine is the latest addition to the Paso-Primero house range and it really packs a punch.
There is a golden hue to this wine which gives an early indication of its weight and complexity. The nose is brimming with aromatics ranging from bright citrus to herbaceous & floral all enhanced with hints of honey. The palate glides between sensations as its medium weight body gets lifted with zingy acidity. The ripe fruit flavours suggest a sweeter wine but the crisp acidity gives Paso-Primero Blanco a dry, clean finish. As is common with wines made from the Verdejo grape there is an underlying profile of nuts, crisp apples and a backbone of minerality.

Food Pairing : Unfortunately we've forgotten who passed this quote along but the best descriptor for Verdejo we've heard is 'it's the perfect afternoon snacking wine'. It pretty much sums everything up! With more weight than a Sauvignon, more aromatics than a Chardonnay and zingy acidity similar to a Riesling it covers a lot of bases so it goes with a lot of foods. Classic pairings are shellfish, seafood and Chinese dishes but we're happiest when we're sitting with friends next to a big bowl of salted almonds and a cold glass of Paso-Primero Blanco.
2015 Vinification Notes : Verdejo is a very malleable variety and can be taken down several routes through the wine making process. Lots of new producers are using barrel ferments and oak components to encourage variety and develop new styles but we wanted to keep Paso-Primero Blanco as classic as possible. Clean, low-oxidative techniques ensured that the wine kept it's natural characteristics and maintained its varietal profile.
